Nguyen Tran is an entrepreneur and restauranter out in Los Angeles, California. He entered the culinary world by opening up an underground and illegal “culinary speakeasy” out of his apartment with his wife. From there he wrote a book (Adventures in Starry Kitchen: 88 Asian-Inspired Recipes from America's Most Famous Underground Restaurant) and became a partner for an Asian restaurant/barcade (bar/arcade) called Button Mash. We talk about his fearless approach to running his restaurant, we get into the thick of what is authentic Vietnamese cuisine, and how fatherhood impacts his creativity. Listen here!
